Green cabbage, blue cheese, fennel & apple slaw.
I looked at my veggies today and came up with this! I had some cabbage and fennel to use up, and since I was making a rich pasta dish I wanted something light and acidic to go with it.
This is an easy slaw. Makes a great side dish on a hot summer dish with a picnic or bbq or whatever. Plus you can substitute most of these ingredients as well.

Salad
Fennel cabbage apple and blue cheese slaw.
1/4 head green cabbage (shaved or thinly sliced)
1/2 head fennel (shaved or thinly sliced)
1 gala apple (diced or matchsticks)
1/4 red onion (thinly sliced or shaved)
2 Tablespoons blue cheese (crumbled)
1 Tablespoon Dill
Dressing
1/2 cup buttermilk
3 Tablespoons blue cheese
1/4 cup apple cider vinegar
1 pinch dill
1 1/2 teaspoon sugar
1/2 cup olive oil
